Observed pizza rolling racks with encrusted grease and soil accumulation. Non-food contact surfaces of refrigerator not cleaned at a frequency to preclude accumulation of dirt and soil.

Violations: Food facility does not have available sanitizer test strips or test kit to determine appropriate chlorine sanitizer concentration. QAC strips are available to check sanitizer in three compartment sink. Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwasher was 0 ppm, and not 50-100 ppm as required. Facility does very limited ware-washing. Facility will use sinks to sanitize until ware-wash machine can be serviced.
