IN SEASON: EAT MORE GREENS! Specifically, beet greens. Did you even know they were edible? Well they are, stems and all. (Simply chop the stems into small segments). And the best part? Sometimes you can get beet greens for free. A little bird once tipped us off to that. Next time you’re at your local farmers market, ask a farmer selling beets what he or she does (or has done) with his or her greens, and you might score a sackful. Take them home, saute them in a little olive oil and garlic, perhaps throw in some bacon — isn’t everything better with bacon? — and simmer for 15 minutes or so, covered.
