The combination of chicken and waffles is nothing new to diners of America. In fact it has been a popular dish, especially in the South, and a part of soul food’s amazing cuisine for 100 years. It is also believed that in the 19th century, newly freed slaves invented the dish when looking for a protein to go with their breakfast breads. It seems chicken necks were plentiful, and they fried them to accompany their waffles. With the addition of honey and butter, the rest seems to be history.

While Peculiar Culinary Co. did not invent chicken and waffles, we like to think we perfected it with our rendition seen below. It has a kick, is full of bold flavor, and is certainly something different with which to surprise your dinner guests.

While every spice and trick I use may not be included in the recipe, I assure you, you will love this dish as much as I do.

Our chicken and waffles includes buttermilk Belgian waffles, popcorn-dusted chicken thigh, chipotle maple syrup, crumbled, peppered bacon and pickled jalapeno. The recipe feeds six.


6 boneless skinless chicken thighs

1 cup buttermilk

4 eggs

2 tablespoons hot sauce salt and pepper

1 tablespoon granulated garlic

Marinate chicken in a mixture of the last four ingredients for 24 hours.


1 medium bag popcorn, popped

1 cup flour

salt and pepper

1 tablespoon dried herbs

1 tablespoon granulated garlic

1 tablespoon granulated onion

Put ingredients together in food processor and turn into dust. After 24 hours in marinade, dredge chicken in the popcorn-flour mixture, coat evenly and fry in vegetable oil. Make sure the oil is hot enough to fry but not so hot as to burn the popcorn.


2 cups grade A maple syrup

1/2 can chipotle peppers with adobo sauce

4 drops vanilla extract

2 tablespoons brown sugar

pinch of salt and pepper

Bring all ingredients to a simmer and puree together


2 eggs

2 cups all-purpose flour

1 3/4 cups milk

1/2 cup vegetable oil

1 tablespoon white sugar

4 teaspoons baking powder

1/4 teaspoon salt

1/2 teaspoon vanilla extract

Blend all the wet ingredients in one bowl and all the dry in another, then slowly fold them in together. Use your favorite waffle maker and use a quarter of the waffle for each portion Stack the fried chicken on top of the waffle and drown it in your chipotle syrup. Add pickled jalapeno for an extra kick and set the whole thing off with some crispy bacon bits. It’s different and yet approachable and a great way to show off to some party guests.
