I was going about my daily run this past week when I noticed my neighbor had put out a table with the word “free” written next to loads of tomatoes, strawberries, and other goodies. The tomatoes caught my eye and I knew it was time to make salsa, with a sweet twist.
While making a salsa like this is easy — it’s just chopping vegetables after all — getting the right mix of veggies, sweetness, and spice is hard. That being said, the taste testers seemed to enjoy this salsa. Fellow test kitchen cook Mary Therese declared the salsa a “winner” and said, “The peaches complemented the spice of the jalapeños.”
Reporter Jen Learn-Andes thought, “The jalapeños were powerful but made tolerable with the peaches and fresh lime juice.”
“It tastes good, but I could do with less jalapeño,” said reporter Bill O’Boyle.
As I said, getting a good balance is key. Next time I would make a separate less spicy version for anyone who doesn’t enjoy a spicy dish.
The texture of this salsa is on the chunkier side, which didn’t go over well with page designer Mitch Hall. He would have prefers more of a “liquidy salsa.” I do think if you wanted a different consistency to this salsa, you could throw it into a food processor and get the desired texture.
Fellow page designer Lyndsay Bartos loved the texture and proclaimed the overall dish “delicious.” I have to agree with her, this simple salsa brings a sweetness and spicy kick that is sure to please.
Ingredients for Peach Salsa
1 pound tomatoes, diced
2 jalapeños, seeded and finely diced
1 1/2 pounds peaches, diced
1/2 bunch cilantro, chopped
3 Limes, juiced and zested
1/2 teaspoon salt, or to taste
1/4 teaspoon freshly ground black pepper or to taste
Directions
1. Chop tomatoes and transfer them to a large bowl
2. Finely chop seeded bell pepper and jalapeños. Transfer all your veggies to the bowl.
3. Dice the peaches. No need to peel them unless you want to. Transfer peaches to your bowl.
4. Add 1/2 bunch chopped cilantro (I skipped cilantro this time), juice and zest 3 limes, 1 1/2 teaspoon salt and 1/4 teaspoon pepper. Add more salt and pepper to taste if desired. Fold everything together until well mixed and enjoy with your favorite tortilla chips.
