Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration for quat and chlorine sanitizer.

Wildcat Saloon and Eatery, 192 Main St., Sturges, May 1. Regular inspection; in compliance. Violations: Raw animal foods (eggs) were stored above ready-to-eat foods (deli meats/cheeses) in the walk-in cooler. The eggs were moved during this inspection. Observed food stored directly on the floor in the walk-in freezer area, rather than 6 inches off of the floor as required. Hood filters above grill/fryer area have an accumulation of grease and static dust. Ambient air temperature of bain marie used for sides was observed at 50 degrees F during this inspection. There were no time temperature control for temperature control for safety foods in the unit at the time of this inspection. Unit will not be used until it can be serviced. Mechanical ware washing equipment had a soap buildup observed inside.
Greek American Grill, 540 Scranton Carbondale Hwy., Dickson City, May 2. Regular inspection; out of compliance. Violations: Commercially processed refrigerated ready-to-eat, time/temperature control for safety food (deli meats/cheeses), located in the walk-in cooler, and held more than 24 hours, are not being marked with the date it was opened. Refrigerated ready-to-eat, time/temperature control for safety food (sauces, salads, mousaka, pasticchio) prepared in the food facility and held for more than 24 hours, located in the walk-in cooler, is not being date marked. Working containers in ware-wash area, used for storing chemicals and cleaners taken from bulk supplies, were not marked with the common name of the chemical. The chemicals were identified and labeled during this inspection. The person in charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Food facility has an employee who held a Certified Food Manager certificate; however, the certificate has expired and is no longer valid. The owner is in the process of completing course and exam. Food in the walk-in cooler, walk-in freezer and reach-in freezer areas stored open with no covering. The foods were covered during this inspection. Observed food stored directly on the floor in the walk-in cooler and walk-in freezer area, rather than 6 inches off of the floor as required. Sauces, rice, grilled vegetables which were cooled, were not reheated to 165 degrees F for hot holding. Items were placed at room temperature into the hot holding units. All foods were re-heated to 165 degrees F during this inspection. Rice, sauces, grilled vegetables were held at 50-80 degrees F, in the hot holding area, rather than 135 degrees F or above as required. Person in charge was instructed on the proper methods for re-heating foods prior to placing in hot holding equipment during this inspection. Temperature measuring devices for ensuring proper temperatures of equipment are not available or readily accessible in bain marie equipment in main kitchen. Food facility does not have available chlorine sanitizer test strips or test kit to determine appropriate chlorine sanitizer concentration. Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwasher was 0 ppm, and not 50-100 ppm as required. Once the sanitizer was primed during this inspection the chemical sanitizer residual was 100 ppm as required. The floor underneath the cooking equipment has an accumulation of grease and old food debris.
Trojan Diner, 135 N. Main St., Moscow, May 4. Follow-up inspection; in compliance. Violation: Old food residue on the blade, blade guard and frame of the meat slicer. The slicer was disassembled and cleaned.
Convenient Food Mart #3009, 601 Washington Ave., Jermyn, May 4. Regular inspection; in compliance. Violations: Pre-packaged foods (baked ziti, macaroni & cheese, pork barbecue) are not labeled properly with ingredient statement and net weight. Reviewed and left a copy of PDA’s Guide to labeling of foods for retail with the owner. Non-food contact surfaces (fan guards) not cleaned at a frequency to preclude accumulation of dust.

North Pocono Intermediate School, 701 Church St., Moscow, May 4. Regular inspection; in compliance. Violations: Hot and cold running water is not available in the kitchen for hand washing. Only hand sanitizer is being used and food employees are handling exposed foods. A cooler with spigot was brought in, water temperature 145 degrees F, for hand washing. Soap, paper towels and a hand wash sign are available. Ice buildup in the walls and lid in the “Jack & Jill” reach-in freezer. There is no hot and cold running water in the kitchen due to a crack in the cast iron pipe on the grease trap line. A repair service company was called and the section of pipe is being replaced. As per maintenance, water should be back in service by noon today. Lack of water availability affected the kitchen area only.
