Lyons Den, 34 Orchard St., Glen Lyon: Regular Inspection, in compliance. Violations: In use knives and Stem thermometer were stored in a wooden scabbard which is not easily cleanable. The wooded scabbard was discarded during this inspection. In use/stored knife a food contact A A stored knife surface, was observed to have food residue and was not clean to sight and touch. The knife was removed from scabbard and placed in sink to be washed and sanitized during this inspection.

Ramada Inn Hazleton No. 11568, 1221 N. Church St., Hazleton: Compliance inspection, in compliance. Violation: The food facility does not have the original certificate for the certified food employee posted in public view. Food manager’s certificate was posted during this inspection.
Modern Lanes, 1948 Wyoming Ave., Exeter: Regular inspection, in compliance. Violations: A temperature measuring device for measuring manual ware-washing wash and sanitizing water temperatures is not available. Observed a build up of mild like residue on the deflector plate in the ice machine. Machine was cleaned. Observed a build up of dust on the fan guard in the keg cooler. Observed a build up of dust and debris on the shelf holding liquor bottles in the bar area.

Crabby’s Seafood Grill, 3159 Lower Demunds Dr., Dallas: Regular Inspection, in compliance. Violations: Fish stored in the reach in refrigeration unit stored open with no covering. The fish was covered during this inspection.

Station 33, 31 E. Diamond Ave., Hazleton: Follow-up inspection, in compliance. Violations: Observed rust forming on the metal shelves in multiple refrigeration units.
Butcher Bob’s BBQ, 683 S. Mountain Blvd., Mountain Top: Regular inspection, in compliance. Violations: Raw eggs were stored over ready to eat vegetables. The eggs were moved to the bottom shelf of the refrigeration unit during this inspection. Commercially processed refrigerated, ready to eat, time/temperature control for safety food (cheese), located in the deli case, and held more than 24 hours, is not being marked with the date it was opened. The cheese was date marked during this inspection. Lights are not shielded or shatter proof in the ware wash/storage area.
Leggios Pizza and Italian Restaurant, 1092 Rt. 315, Wilkes-Barre: Compliance inspection, in compliance. Violations: Observed a bag of onion stored directly on the floor in storage area, rather than 6 inches off of the floor as required. Onions were moved. An open employee’s beverage container was observed in prep area, a food preparation area. Beverage was covered.
Rustic Kitchen at Mohegan Sun, 1280 Hwy. 315, Wilkes-Barre: Regular inspection, in compliance. Violations: Drawer refrigeration unit under the grill area observed with a temperature of 50*F and not 41*f or less as required. Unit will be serviced prior to storage of TCS foods. Multiple foods (Spring rolls, Calamari, Arancini) held at 50-55 °F, in the drawer refrigeration unit under the grill area, rather than 41°F or below as required. Foods were discarded. Observed 6 small flying insects in the dry storage area.
